Garlic and thyme croutons

An easy recipe for making your own croutons and using up left-over bread.  Perfect for that added crunch in soups and stews this Winter!

You'll Need:

Ingredients:

  • 2 - 3 slices day old bread (you can use white, wholegrain or any other variety)

  • 3 cloves of garlic

  • 2 tbs fresh thyme, finely chopped

  • 2 tbs oil

1. Preheat oven to 200'c. Line a baking tray with baking paper.  Roughly chop your bread into 2cm x 2cm squares, or size to your preference.

2. Sprinkle bread over baking tray and drizzle with oil.  Top with fresh herbs and toss to combine

3. Cook in oven, turning after five minutes.  Both sides should be golden brown and smell delicious after about 10 minutes in total

Note:

These croutons should store well for several weeks in an air tight container.  You can try all types of herbs with these.  Some recipes call for oregano and some for rosemary - which would be delicious on a lamb stew, by the way!

Here is a similar recipe using a different method for Garlic and Herb Croutons.  This version, from Epicurious, using parmesan sounds delicious!
