Rainbow Cupcakes
With an Irish husband, St. Patrick's Day has long been a favourite holiday at our place. Sadly this was the first time we've missed the parade in years.
Having a new baby and a runaway toddler - I am not kidding, that child is set for a track and field medal, I thought it best to stay home this year. Instead, we were up at the crack of dawn baking these little guys...Seriously delish, even if you're a little adverse to eating anything green!
You'll Need:

1 large bag of sour rainbow straps, cut into thirds

1 packet of mini marshmallows

star sprinkles
-
green food dye
-
200grams icing sugar

60 grams butter, softened

2 tsp milk
-
1 box of mudcake cake mix
Note: These cupcakes would make cute party favours or gifts, when put into individual bags and tied with a ribbon.
Steps:
1. Prepare your cake mix according to instructions and spoon into cupcake foils. Bake and allow to cool completely before icing.
2. Mix your icing by adding 60 grams of softened butter and 2 tsp milk to icing sugar in a large mixing bowl. Add a few drops of green food dye to your icing mix until you reach the desired colour.
3. Don't cut the tops off your cupcake as you normally would before icing. Instead, leave the risen top so that you're left with what will resemble a "hill" once we add our green icing. Using a spoon, cover the top of your cupcake entirely. Add sprinkles.
4. Make two small cuts in your cupcake. Push each end of your rainbow strap into the incision, so that you have a rainbow, just like the picture above.
5. While your icing is still wet, push two or three mini marshmallows onto the base of each rainbow end. The icing should hold the marshmallows in place, once dry. Enjoy!
