You'll Need:

1 large watermelon quarter (about 1 - 1.5 kg or 3 Lbs)

100 gms Danish feta

2 tbs mint, roughly chopped or torn

splash of balsamic vinegar, to taste
Watermelon, feta and mint salad...
A picture tells a thousand words and delicious, juicy watermelons are just the thing to quench a thirst on a warm, Spring Day.

Steps:

Roughly chop watermelon into dainty pieces and throw into a large bowl

Crumble feta on top

Add mint, before lightly tossing with gentle hands

Choose whether to add a splash of the balsamic vinegar now, or to leave on the table for guests to serve themselves

Serve and enjoy!
There are quite a few versions of this salad out there. Some love Nigella Lawson's version with black olives, but even though both my kids are olive addicts, I'm not a fan of the watermelon/ olive combination. Taste also does a version with a tangy lemon dressing you can find here, or another similar version with 1/2 a cup of pumpkin seeds for a bit of crunch. However, my favourite version still remains the above - simple, sweet and juicy.
