Hidden Vege Nacho Surprise

A fast, easy and tasty way to get some additional veges into your dinners. Oh, and the kids won't suspect a thing!
You'll need:
1 x 400 gram tin of diced tomatoes
250 mls tomato passata
Your choice of diced vegetables - some ideas include capsicum, corn, legumes, steamed broccoli, mushrooms, carrot
500 gms minced meat (beef or pork) or shredded chicken
1 large bag of corn chips
grated cheese to taste
1. Brown 500 grams of minced meat (beef, pork or even shredded chicken).
2. Add your choice of vegetables to your pasta sauce and blend. Warm sauce over a low heat and bring to a gently simmer.
3. Layer your corn chips in a large, oven proof bowl.
4. Spoon mince meat over the top and then ladel on your sauce. Top with grated cheese.
5. Place in the oven for 5 minutes, or until cheese has melted.
